How to Roast Peanuts in the Microwave

If you like roasted peanuts, you should try roasting your own in the microwave. Roasting peanuts in the microwave is very easy to do and it's a fun food project to do with the kids.

What you need to roast peanuts in the microwave:
Peanuts in the shell
2 tablespoons of butter

Buy whole peanuts in the shell. Check the freshness date on the package and get the freshest peanuts you can find. It's better if you buy unsalted, but if all you can find it salted, that will work too.

Get the kids involved and have them remove the shells from the peanuts. You will need about 2 cups of shelled peanuts, so what you can do is put a measuring cup in the center of the table and let the kids fill it up with peanuts as the shell them.

Once you have 2 cups of shelled peanuts, spread them evenly in the bottom of a glass, microwave safe dish. A 9 x 12 dish is a good size dish to use. A round casserole dish will work too. Dot the peanuts with about 2 tablespoons of butter. You must use real butter, not margarine.

Microwave the dish of peanuts on high power for 2 minutes. Stir the peanuts and cook again on high power for about 10 minutes more, stirring once half way through. If you want a darker roast, you can cook for an additional 2 minutes. While all this cooking is going on, you can have the kids shelling more peanuts for a second batch.

Remove the peanuts from the microwave using a pot holder (the glass dish will be hot!). Let the peanuts cool completely in the glass dish. When they are cool, store the peanuts in any air tight container.

If you want flavored roasted peanuts, you can sprinkle the peanuts with any of the following as soon as you remove them from the microwave (sprinkle and mix while the peanuts are still hot): paprika, garlic powder, onion powder, any type of flavored salt, Mrs. Dash, cinnamon, allspice, curry, or whatever seasoning you feel like trying!

You can also add liquid seasonings during the cooking process. When you stir the peanuts for the first time, consider adding a few dashes of any of the following: Worcestershire sauce, hot sauce, soy sauce, teriyaki sauce, barbecue sauce, steak sauce or lime juice.

Roasted peanuts make great gifts to give to someone who is hard to buy for. Make up an unusual flavor and make a nice tin of peanuts to give to someone you know!
