Delicious and Easy to Do

A crock pot can be a wonderful kitchen aid for the working mom or any family. Rotisserie chicken in your crock pot is a delicious and simple meal for anyone. Buying an entire chicken is usually less expensive, and if you catch them on sale, they do keep well in your freezer for a couple weeks. Cornish hens also work well with this recipe.

Wash the chicken thoroughly and place on a plate. Salt, pepper and season to taste. Sometimes we use a touch of lemon pepper. Next wad several sheets of aluminum foil and place in the bottom of your crock pot. Place the chicken on top of the foil, making sure there is a layer of foil between the chicken and the crockpot. Place the lid firmly on the crockpot and cook on low heat while you are at work. For faster cooking, cook on high heat for two - three hours, depending on the strength of your crockpot. You will be able to tell when the chicken is done. It will be very tender to the touch.

Using tongs, carefully lift the chicken out and onto a serving plate. It is so tender, it will be falling apart. You have delicious rotisserie style chicken and it goes well with any side dish. A quick tossed salad or steamed vegetables and your family is eating healthy and delicious. A family favorite is rotisserie chicken, rice, green beans and steamed carrots.

The chicken cooks in its own juices without any need for oils, butters or added fats. Crockpot rotisserie style chicken is a huge hit with all ages too. You can try it with different spices also. A little cajun or barbecue seasoning adds an entirely different tone to your meal. With a little dirty rice and baked beans, a cajun flavor sets the tone. Try rotisserie chicken in your crockpot and you will never be running by the grocery deli again.
