How to Make Salmon Taste Heavenly

C. Penlington
Do you love salmon? Would you like to eat more seafood - but wished it tasted better? Well, this is for you. I have a wonderful recipe for salmon - and I've never tasted anything else quite this good. When I cook salmon - I always rinse it under the tap before I cook with it - but that's just personal preference. Here's the recipe:

Since salmon can be difficult to flavor - this recipe will help immensely in this area. I have tried cutting the marinating time down - but it really is soooo good when left to marinate for the full 4 hours! I feel that this recipe is an important addition to people's cooking routine, as it may help others in their quest to consume more salmon - thus increasing their 'omega' intake.

one lb of salmon (fresh from the store - I like salmon steaks)
one cup of fresh basil (tightly packed)
one Tablespoon fresh Tarragon
1/4 cup red wine vinegar
1/4 cup balsamic vinegar
1/2 cup olive oil
1-2 Tablespoons lemon juice (to taste)
2 Tablespoons of chili paste w/ garlic (can be found in the asian section of large, well-stocked grocery stores.)
2 garlic gloves - minced
salt and pepper to taste

Place the salmon into an oven-safe dish. Put all of the remaining ingredients - except the olive oil - into a blender. Turn the blender on, and add the olive oil slowly but steadily.
Then, pour the blended ingredients over the salmon. Cover the oven-safe dish with foil, and put it in the refridgerator to marinate for four hours. After two hours, take the salmon out of the refridgerator, and turn the salmon over - unless the marinade covered the salmon in the dish, in which case, you can eliminate this step. After the salmon has been marinating for four hours, preheat the oven to 350 degrees Fahrenheit. Take the salmon out of the fridge, and pour the marinade off of the salmon. Put the foil back on the dish to cover the salmon - and place the dish into the pre-heated oven, for approx 30-45 minutes, depending on how you like your salmon cooked. You can also cook the salmon on the grill - it just depends on your preference. If you have a lot of success cooking on the grill (some people don't) and would prefer to do that, go ahead.
