How to Season Meat

Season Meat Properly for More Flavor

Marsha J
No matter how hard some people try they can never seem to get meats to taste like they actually added seasoning to it. Bland is not even the word to call these foods. Even worse without the proper preparations a lot of meats, especially deli bought cooked meats, can taste very raw and disgusting. Great tasting and seasoned meats are all about the preparation.

To get great tasting meat do not pull the meat out of the fridge a minute before cooking it. Seasoning meat just before cooking it is the reason for such awful tasting food. The key is to defrost the meat one or two days before cooking it. Once the meat is defrosted, add some water in a bowl or pot and place the meat inside it. Then get some vinegar, lemon or lime juice and pour the liquid over the meat and into the water. After that is done, place the entire pot or bowl back into the fridge.

If you are preparing the meat two days before it is to be cooked, take it out of the fridge and wash off the vinegar, lemon or lime juice and get your seasons together and add them to the meat, being sure to carefully rub the season all over. Get a knife and stab some holes into the meat to get the seasoning under the skin and flesh of the meat. Place the seasoned meat into an airtight bowl or simply place them into a large bowl and cover with saran wrap or foil paper. Leave the seasoned meat in the fridge until it is time to cook them. This gives the seasoning time to soak into the meat.

If the meat is being prepared the day before cooking, leave the meat to soak for a few hours in the vinegar or lime juice and water mix. The meat and water can be left out of or in the refrigerator it is the cook's choice. After a few hours, empty the water from the meat and wash the meat thoroughly. Add the seasoning on the meat and place it in the fridge overnight. Take the meat out of fridge when it is time to start cooking.

This is a cheap and easy way to get great tasting and great seasoned food but there are also many different kitchen products and special marinade seasoning on the market for meat. Depending on how often meat is cooked in the household, the cook of the house can try some of these different products.

Some of the products come with special meat syringes that allow the cook to push seasoning deep into the meat and other products try to push air and season into the pores of the meat. There are also some marinades seasons that are supposed to work on there own. The marinades are supposed to be rubbed into the meat and then the meat is put in the fridge and left until cooking time. Find the product or preparation method that is right for you and begin having food that tastes great and seasoned.

  • Give the season a few hours, a day or overnight to sink into the meat.
  • Soak the raw meat in vinegar, lime or lemon.
  • Soaking the meat in the lemon juice or vinegar helps get rid of the raw taste of the meat.

What do you mean "wash the meat"? What the hell is the point of the vinegar and spices if you're just going to wash them all off? I'm supposed to scrub the meat with soap and water?

I am currently trying this. I have some beef stew cuts soaking in a bowl of 2 1/2 cups water, 1/4 cup apple cider vinegar and 6 cloves of garlic. I am letting this sit for an hour prior to baking. As soon as it sits in this pre-marinade, I will season with salt, pepper and garlic powder.
