How to Make the Snow Queen's Hot Chicken Salad

We all know it is the season for baby showers, bridal showers, and other gatherings that demand a special sandwich. My Cuzzin the "Snow Queen" has a delightful hot chicken salad recipe that makes 45-50 sandwiches. I am sharing the Snow Queen's recipe with y'all in hopes that I may help with your next gathering. The Snow Queen claims it is best served on a Croisant Roll The whole batch including 50 Croisant Rolls costs under $75.... I think a good fresh dinner roll (ie snow ball) would reduce the cost considerably. Let's all roll up our sleeves, take off our rings, wash out hands, fill our coffee cups and get cooking.

The Snow Queen's HOT CHICKEN SALAD (SERVES 45-50 PEOPLE)

Ingredients:

3 (3LB -2OZ) cans All Natural Chicken Breast Chunks (Baker & Chef Brand from Sam's)

4 Cups chopped celery (1 whole stalk)

6-6 1/2 Cups Toasted Silvered Almonds (save 2-21/2 cups for the top-set aside)

4 Cups Chopped Water Chestnuts (4-8oz cans)

1 Minced raw Softball sized sweet onion

4 Tablespoon Lemon Juice (green bottle stuff)

2 Quarts HELMAN"S Original Mayonnaise (This brand works best)

1 Tablespoon table salt

1 Tablespoon black pepper

2 -8oz bags shredded cheese (I use Colby Jack)

Directions:

Mix all the above well (remember to keep some almonds out for the topping)

Put in Large and Small greased foil pans.

Top with 2- 8oz bags of shredded cheese (I used Colby Jack)

Spread the rest of the almonds on top.

Cover with foil.

You can refrigerate over night if you want.

Bake at 425 degrees covered for 15-20 minutes and then uncovered for 5 minutes.

When done, re-cover with foil until you serve.

Notes From the Snow Queen:

Other brands mayonnaise will work but it does change the flavor. You could also reduce the costs by roasting a couple of turkey breasts the day before boning and chunking it yourself. I think you could also add a couple of cups grated carrots for color.

I have not made this recipe but I have tasted it... MMMM Good OK the recipe is now yours. Have a baby, bridal shower just so you can try it. Better yet invite all your friends, your minister, Rabi and their spouses and pretend it's a shower...donate the gifts to your local battered womans shelter. Give everyone the link to this recipe.
