How to Make Spring Lemon Bread

  • 1/2 cup butter
  • 1 2/3 cup flour
  • 1 1/2 tsp lemon peel
  • 1/4 tsp salt
  • 1 cup sugar
  • 3/4 cup buttermilk
  • 1/2 tsp baking soda
  • lemon glaze
  1. Grease the bottom of a loaf pan. You can use wither butter or oil. i have found that either work well. Dust with flour.

  2. Step 2

    In a large mixing bowl beat butter with an electric mixer for about 30 seconds or till softened. Add the sugar and beat about 5 minutes till they appear to be light and fluffy.

    Add eggs, flour, buttermilk, lemon peel, baking soda, and salt. Beat till combined.

    Pur batter into pan and spread evenly.

    Bake in a 350 degree oven for 45 min. Cool on a wire rack for 10 minutes. Remove from pan. Place on wire rack set over waxed paper.

  6. Step 6

    Lemon glaze: In a small bowl stir together 3 Tbsp lemon juice and 1 Tbsp of sugar till sugar is dissolved. Spoon Lemon glaze over top. Cool completely on wire rack. Wrap and store overnight before slicing.
