How to Make Stan Poe's Meatloaf

Meatloaf is my favorite food. I know there are about as many meatloaf recipes as there are stars in the sky. I've tried most of them and seem to return to a simple recipe that stands out for me. I love cold meatloaf sandwiches, hot meatloaf with rice or mashed taters. I also like to prepare a meatloaf and wrap some taters for baking and take them to a new Mom for a meal she can just pop in the oven. Y'all know the routine. Roll up your sleeves, take off your rings, wash your hands and let's get cooking. Someone please put on a fresh pot of Columbian Coffee we're making Stan Poe's meatloaf today.

Stan Poe's Meatloaf

Ingredients:

1 pound ground chuck (85/15 mix)

1 pound bulk sausage (use your favorite)

4 slices hearty bread (I like Double Fiber)

2 chicken eggs

1 cup buttermilk (Sub Whole milk with 2 Tablespoons lemon juice)

1 softball sized onion fine diced

1 Tablespoon dry Parsley flakes

1 Tablespoon rubbed Sage

1-2 Tablespoon Garlic Powder (not Garlic Salt)

2+ Tablespoons Worcestershire Sauce

Directions:

Pur bread, eggs, parsley flakes, Sage, Garlic Powder, and Worcestershire sauce into a bowl pour buttermilk over it all and set aside. Preheat oven to 375. Dice the onion place in a large bowl. Add both sausage and ground chuck and mix well. Mix bread spices and milk. Add bread mixture and all liquid mix well, place in a 9x9 pan and bake 1 ½ hour remove from oven and allow to stand 20 min before cutting.

Notes:

Baked potatoes will make best use of your energy dollars since the oven is already running. I also think roasted asparagus or green beans is a treat. If you just spread the fresh or frozen asparagus or green beans on a sheet pan, drizzle with a little olive oil sprinkle with a little sea salt and put in the oven when you pull the meatloaf out. 20 min you're ready to carve the meatloaf and the veggies are roasted.
