How to Make Stir Fried Pineapple Rice

This sweet rice recipe is a great dish to serve rice with pork chops, grilled chicken breasts, or any type of broiled or fried seafood. While containing pineapple, this rice is not overly sweet, which helps to make it enjoyable even for people who are not fond of cooked fruit. Best of all, it takes very little effort to make this pineapple fried rice recipe, which means you'll have more time to spend with family and friends.

Things You Need

1 eight or ten ounce can of crushed pineapple
4 cups water
2 cups rice (brown or white - either will work)
1 tablespoon of oil - peanut oil is best, but vegetable oil will do fine
2 large eggs
1 12 ounce package of extra firm tofu
1 cup chopped mushrooms
1 cup finely chopped purple onions
1 cup of carrots, sliced very thin or shaven
Soy sauce

Step 1

Open the can of pineapple and drain the juice into a small container. Set the pineapple to one side for now.

Step 2

Prepare the rice. In a pot, combine the water and pineapple juice and bring the liquid to a rolling boil. Add the rice, reduce the heat and allow the rice to cook thoroughly. For this recipe, it's fine if the rice is overcooked a little.

Step 3

Prepare the rest of the ingredients. Beat the eggs, and set to one side. Cut the tofu into small strips. In a separate pan (a wok is perfect), heat the oil.

Step 4

Beat the two eggs and pour them into the pan. Don't stir the eggs, let them set into a pancake shape, then use a spatula to cut them into strips. Remove the eggs from the pan and set aside for a moment.

Step 5

Toss in the small strips of tofu and allow them to brown slightly. Add in the onions, carrots, and mushrooms, adding a little more oil if necessary. Cook for roughly three to four minutes, or until the vegetables are tender but not mushy.

Step 6

Add the rice and strips of egg and continue to stir the mixture until everything is thoroughly mixed. While stirring, add in some soy sauce to taste. Just a couple of minutes of stirring once all the ingredients are combined should do the trick. Remove from heat and serve immediately.

Tips and Warnings

This simple rice recipe can easily be adapted to suit the tastes of your and your loved ones. If you don't like tofu, substitute small piece of ham or chicken instead. Just make sure the meat is cooked thoroughly before adding the vegetables to the pan.
