How to Make Straciatella Roma

Aka Italian Egg Drop Soup

Cold and Flu season has once again become part of our everyday life. When I feel this malady creeping into my being I start making soup. I know there is nothing more healing than a bowl of hot soup preferably chicken. There was an old Yiddish grandma that told me "What can it hurt?" There are times when this affliction comes into our lives so quickly we don't have the time or strength to prepare a long cooking soup. I honestly don't care for most canned soups but this recipe for Straciatella Roma is quick and easy with all the healing properties of the long simmering chicken noodle soup. Y'all roll up your sleeves, take off your rings, wash your hands and lets get cooking. If you have already caught the cold or flu perhaps you should wash you hands a second time.

Straciatella Roma

aka Italian Egg Drop Soup

Ingredients:

6 Cups chicken stock divided (can or box is OK, even bulion with water will work)

2 Tablespoon lemon juice (green bottle works)

3 eggs slightly whipped

2 egg yolks slightly whipped

½ Cup Parmesan Cheese (green box stuff works)

¼ cup corn starch

2 Tablespoon dry parsly flakes

1 teaspoon Ground Nutmeg

1+ Tablespoon Garlic Powder

1 teaspoon sea salt

½ teaspoon black pepper

Directions

Whisk eggs, yolks, Parmesan cheese, flour together and set aside. Put remaining chicken stock, lemon juice, garlic powder, sea salt, black pepper, and nutmeg in pot and bring to a rolling boil. Slowly add egg mixture stirring soup to break up strands of egg. Allow to boil just a few mins then add dry parsly flakes and serve.

Notes:

I like to sprinkle more Parmesan cheese on top of each bowl. The Queen Goddess like to float a Tablespoon of Real Butter on top her bowl (something about that's the way Grandma Powell made me feel better) Soda crackers and Strawberry or Blueberry Preserves are the perfect enhancement to this bowl of soup/Italian penicillin. Add a pot of green tea and some ice cold OJ for the healing meal.

OK the recipe is yours. Change it if you must. If your already sick make it from whatever you have in the pantry. Make it before you get sick just because you deserve a great bowl of soup today..."What can it hurt?" Share with a sick friend. Freeze some in single serving size for an emergency.
