How to Make a Summer Meal

Chicken Thighs, French Onion Rice, and Bubba's Bar Cookies

I know it's Summer time and no one wants to slave over a hot stove when it's over 70 and the humidity is over 100%. I also know I want the flavor of a hot homemade meal after a long day at work or play. These are simple recipes to get you out of the kitchen quickly and still provide that longed for real meal homemade flavor. Using the crock pot and the microwave we can reduce the heat in the kitchen and still enjoy a homemade meal.

My Queen Goddess also reminds me "Remember the Titanic." She often thinks about all those gals that skipped dessert the night the Titanic sunk. Let's start with dessert today. Y'all know my routine. Roll up your sleeves, take off your rings,wash your hands and let's get cooking. Someone make a pot of coffee we may need to sample the cookies later.

Bubba's Bar Cookies

Ingredients:

1 roll chocolate chip cookie dough

1 small bag chocolate chips

1 cup orange marmalade

2 Tablespoons butter

Directions:

preheat oven 350. Wet your hands and Spread cookie dough to ¼ " in greased 9" x 13" baking dish. Bake @ 350 for 25 min and allow to cool. Place chocolate chips, orange marmalade, and butter in microwave safe bowl. Microwave on high 1 min and stir. Repeat till chocolate is completely melted. Spread this mixture over cooked cookie dough. Refrigerate before cutting in 12 unless you just want one large cookie.

Crock Pot Chicken Thighs

Ingredients

3-4 pounds chicken thighs (Breasts will work too)

18 oz jar Orange marmalade

1 envelope French Onion soup mix

Directions;

Place chicken thighs in crock pot. Open orange marmalade and pour over chicken thighs. Open French Onion soup mix and sprinkle over orange marmalade. Cook on low 8-12 hours. NO OTHER LIQUID is needed.

French Onion Rice

1 Cup long grain rice

1 envelope French Onion soup mix

2 ½ cups water

1 Tablespoon butter

Directions

In a microwave safe casserole place waster, French Onion soup mix and butter.. Microwave on high uncovered 4 min stir in rice microwave on high uncovered 14 min fluff with fork and serve.

Notes:

I would serve some green beans with the above for a well rounded meal. The broth created by the thighs and marmalade is excellent served over the rice.
