How to Make Thai Chicken Curry

Curry is used in many dishes but more often associated with Indian cuisine, however, many Thai and Laotian dishes use curry too. A fairly common Thai dish is chicken curry. To start off with you'll need these a large sauce pan and these ingredients: 4 cups of coconut milk, which can be bought in cans and found any Asian market, 1 pound of boneless chicken cut into small chunks, 2 tablespoon of fish sauce, 1 tablespoon of sugar, a can of bamboo shoots, about 4-5 kaffir leaves or approximately 2 tablespoon of lime zest if you can't get kaffir leaves, and one half to 1 tablespoon of red curry paste, depending on how spicy you like it. The cooking time is around 30 minutes and this dish will serve four to six people.

The first step is to make the red curry paste if you've bought the powder kind, mix it as instructed on the package. If you've bought red curry paste in a can then set that aside and start with the coconut milk. In a large sauce pan you'll want to pour half of the coconut milk in, set the heat to medium, bring the coco nut milk to a boil and stir it until it starts to separate.

Once the coco nut milk separates when you stir it it's time to add the red curry paste. Stir and mix the two for a few minutes and then add the chicken chunks. Stir the chicken around in the coconut-curry mix and then add the fish sauce and sugar. Continue to mix and stir all the ingredients together for around five minutes, until the chicken starts to change color. Try to stir constantly because if you let the chicken sit for too long it will stick to the pan.

When they chicken looks white and about fully cooked it's time to add in the remaining ingredients. First add the rest of the coco nut milk, stir it, then add bamboo shoots that have been cut into small chunks, and then the kaffir leaves or lime zest substitute. Stir well so that you completely mix all the ingredients together and bring it to a boil again. Salt and ground pepper is optional, so add theses ingredients according to your preference. Once it starts boiling again the chicken should be fully cooked and the dish complete.

Pour the Thai Chicken Curry into a serving dish, garnish it with mint leaves, serve it with steamed rice and you're set. You've officially made an authentic Thai dish! Enjoy.
