How to Thaw Chicken in the Refrigerator

As a new cook, thawing raw chicken was especially daunting due to concern over the possibility of salmonella or other pathogens. Handling uncooked chicken requires awareness, common sense and precautions, but thawing chicken in the refrigerator is both safe and easy. Try this thawing method to get a start on tomorrow's dinner.

Avoid Thawing Hazards
It is easy to set a package of frozen chicken on the counter or in the sink and wait for it to thaw, but doing so is unsafe because the rising temperature promotes bacterial growth. Safe defrosting methods include refrigerator thawing, microwave defrosting and using a cold water bath.

How to Thaw Chicken in the Refrigerator
This is an simple method for thawing raw chicken, but requires advance planning. The first step is to contain the raw chicken so it does not drip in the fridge and contaminate other foods and surfaces as it thaws. I like to set the entire package in a large baking pan and place it in the fridge.

Another option is to remove the chicken from the package and transfer it to a zippered plastic bag, a dish covered with plastic wrap or lidded dish. I usually place a rimmed baking sheet under the chicken because it makes it easier to remove the dish from the fridge and works as a catchall should the chicken happen to drip.

Before and after handling raw meat, be sure to thoroughly wash hands with soap and warm water for at least twenty seconds. Also sanitize countertops, sinks and surfaces or utensils that come in contact with raw chicken. Visit the USDA website for additional safety information.

How Long Does it Take to Thaw
Thawing time depends on the amount of chicken and if it is boneless or not. According to the USDA, boneless chicken breasts typically thaw overnight, while whole chickens and bone-in meat can take one to two days longer.

When to Cook Thawed Chicken
The USDA also explains that chicken thawed in the fridge can safely stay in the refrigerator for one or two days before cooking or refreezing.

    I have to admit, I have thawed chicken on the counter. Typically I do it in the microwave. I have always thawed turkey in the fridge though. Thanks, great tips!
