My Cuz Martha is a cook that wants simple quick recipes that are fool proof. When she sends me a recipe I know this. Today Cuz Martha sent me a recipe for Tuna cups that will knock your socks off. It is also simple to assemble and does reheat well. I could see this being used for a bridal shower or other type party. Myself I like one with a large glass of ice cold tea and lemonade mixed for a late night snack. Y'all put on the coffee, roll up your sleeves, take off your rings, wash your hands, and lets make Cuz Martha's Tuna Cups happen today.

Cuz Martha's Tuna Cups

Ingredients:

1 Tube flaky biscuits (12 count)

2- 7oz packets of tuna (drained)

1+ cups crated sharp cheddar cheese (Your favorite cheese)

1 Cup mayo (not salad dressing)

¼ cup chopped celery

¼ cup chopped onion

¼ cup chopped sweet red peppers

Directions:

Preheat oven to 400. Spray muffin pan with vegetable cooking spray. (or grease it with butter) Push a biscuit into and up sides of each cup. Mix remaining ingredients and divide equally among biscuit cups. Bake 20-25 min or till golden brown. You may need a fork to nudge them out.

Kay & Hump's Fruit and Pasta

Ingredients

1 can pineapple chunks drained

1 can Mandarine oranges drained.

1 small jar of olives drained

½ pound of ham diced

1 Pound pasta cooked to pkg directions (Use your favorite)

1 Jar poppyseed dressing (Your favorite brand)

Directions:

Toss it, Chill it, Toss it again. Serve it cold!

To make this party complete you need a loaf of warm bread

Quick Cinnamon Raisin Bread

Ingredients:

½ Cup oil (Your favorite light oil)

1 ¼ Cup Brown Sugar (Light or dark)

1 large chicken egg

1 Cup Buttermilk (Substitute Whole milk plus a Tablespoon lemon juice)

1 Tablespoon Baking Soda

1 teaspoon salt

2 Cups all purpose flour

1 cup golden California Raisins

¾ cup white sugar

2 Tablespoon ground cinnamon

Directions:

Preheat oven 375. Mix white sugar and cinnamon and set aside. Miz oil, brown sugar, large chicken egg, and buttermilk. Sift Flour,salt, and baking soda together and slowly add to egg and buttermilk mixture. Fold in raisins. Pour half this batter into a greased loaf pan. Sprinkle half the white sugar & Cinnamon mix on top and run butter knife through to swirl. Pour remaining batter into pan and sprinkle remaining white sugar and cinnamon mix swirl again with knife. Bake 35-45 min or till pulls from side of pan. Now the difficult part...Wait till cool before cutting!
