How to Make Three Sandwiches

Winter, Summer, Spring, Fall These Are Great

It is HOT and we want light meals. I know the idea of a sandwich is very appealing to many. The old standard PBJ, egg salad, tuna salad, etc gets a work out this time of the year. Here are three kicked up sandwiches that are excellent. These might also inspire you to kick up your own favorite. Use your imagination. Now you know the routine. Roll up our sleeves, take off our rings, wash our hands.... someone start another pot of Columbian coffee and let's get cooking.

Kicked up Grilled Cheese

Ingredients:

8 slices crusty bread

dried rosemary

1 tablespoon garlic powder (not garlic salt)

1 stick butter (Margarine works too)

1 pound Mozzarella cheese

Strawberry Jam

Dark Brown Sugar

Directions:

First melt butter and stir in Garlic Powder brush a heavy coating on each slice of bread. On the opposite side spread Strawberry Jam sprinkle (a very small amount) with dried rosemary. Layer the Mozzarella next. Close the sandwich and sprinkle a generous amount of brown sugar on the top. Grill till cheese melts and the brown sugar creates a crust. Italian Eggplant Sandwiche

Ingredients:

olive oil

Sandwich buns (aka Hamburger buns)

Jar Spaghetti Sauce (Your favorite)

1 medium egg plant

1 pound fresh Mozzarella

1 egg whipped

1 cup flour

1 Tablespoon salt

1 Tablespoon pepper

1 Tablespoon Italian seasonings

Directions:

Mix flour, salt, pepper, Italian seasonings in a shallow dish and set aside. Slice Mozzarella in 8 and set aside. Slice Eggplant in 8 and set aside. Place whipped egg in shallow dish. Preheat skillet and add some olive oil. Dip slice eggplant into egg then flour and place in hot skillet. Brown both sides and place on bun Place a slice of Mozzarella between each slice of eggplant and one on top. Spread spaghetti sauce on top of bun. Wrap in heavy foil and slide into a preheated 350 oven for 20 min.

Note if you like a saucy sandwich spread the spaghetti sauce on the bottom the bun too before stacking the eggplant on it.

Bacon and Egg Salad Sandwich

Ingredients:

8 slices of crisp bacon crumbled

6 hard cooked eggs grated

½ cup celery fine diced

¼ cup sweet pickle relish

¼ cup French Onion chip dip

1-2 Tablespoon yellow mustard

Directions:

Mix it, chill it, and serve it on a croisant, stuff it in celery, or eat it with a spoon.

Note:

The second day you can stir in a can of drained tuna, drained crab, diced ham or diced chicken and change the menu.
