A Kid's Mardi Gras Party - Have a Mini Mardi Gras Parade

A lot of the fun of Mardi Gras for kids comes from being able to catch or scavenge for trinkets. If you have enough kids, then let each child take turns being a parade walker and tossing beads or trinkets to the crowd. Each child will have the opportunity to throw beads and catch beads, and they will almost always love both aspects.
