How to Make a Tomato Cake

Y'all never heard of a tomato cake? Well many years ago my Mom made this for me the tomato lover in her life. I'm sure she borrowed this recipe from some church cook book. It doesn't matter cause it's Mom's recipe and now I'm gonna share with you. I know you will love it. Now roll up your sleeves, rake off your rings, wash your hands, and lets get baking...

Tomato Cake

Ingredients:

1 prepackaged spice cake mix (your favorite)

1 -10oz can condensed tomato soup (Your favorite)

½ cup whipping cream ( half and half will work)

3 large eggs

½ cup vegetable oil (your favorite)

½ cup chopped walnuts (pecans work too)

½ cup chopped dates ( I also have used raisins)

Directions:

Preheat oven to 375. In a large bowl place cake mix, soup, and cream using a hand mixer blend till moist. Add oil. Add eggs one at a time. Fold in walnuts and dates. Pour batter into a greased 9 x 13 pan and bake 40-45min. Cool completely before frosting. It is worth the wait be patient.

Frosting

Ingredients:

¼ cup whipping cream (Half & Half works)

¼ cup butter (Mom sez real butter on this one)

1 cup firm packed brown sugar (dark or light you choose)

1 1/3 cup powdered sugar

12 large cherry tomatoes (optional)

12 large whole walnuts (optional)

Directions;

Heat cream, butter and brown sugar constantly stirring until sugar is completely disolved. Allow to cool to room temp before adding powdered sugar...hand mixer on Medium speed until you have the consistency you desire. Swirl and frost cake Garnish the cake with the cherry tomatoes and walnuts..

Note:

This is an ancient recipe just as Mom wrote it many years ago. I know it's not low fat, low calorie or any of the other politically correct things that are currently in vogue. It tastes very good and if you follow the directions it will be as good as Mom made many years ago.
