Ingredients
One (9 inch) unbaked pie crusts (some people prefer 2 pie crusts)
1 lbs ricotta cheese
4 eggs, boiled and chopped
4 ounces mozzarella cheese, grated or diced thin
1/2 lbs cooked ham, cubed
1/3 pound Genoa salami, cubed
1/4 pound prosciutto or pepperoni, cubed
3-4 tablespoons grated Parmesan cheese
Preheat oven to 325 degrees F (165 degrees C). Mix eggs and ricotta cheese in mixing bowl. Stir in meats and mix very well. Line pan with unbaked pie crust and put in mixture. Sprinkle with parmesan cheese and cook. Note: Some people like the second pastry on top. I do not use it, but it is up to you.
Also, if you want to avoid some calories use turkey ham or low-fat cheese.
Bake for one hour until top is a nice golden brown. Let cool and serve.
