Step One: Making Mr. Chau Appear

Mr. Chau will appear on a random location on the world map. He shows up randomly after you cleared a world. In order to be efficient, beat World 3 over and over again as it is the shortest level in Scott Pilgrim vs. The World: The Game.

Step Two: Preparing for Mr. Chau

Even if you managed to unlock Mr. Chau on the world map, it is best to avoid him until you are completely prepared. He can deal significant damage if you have a weak defense. Therefore, you should boost up your defensive stats by buying items in the store. The higher your defense is (the max is 100), the better your survivability will be for the upcoming fight. Moreover, you should also enter the fight with a few extra lives just to be safe.

Step Three: Fighting Mr. Chau

Mr. Chau is one of the toughest bosses in Scott Pilgrim vs. The World: The Game as his attack power as astronomical. Because of this, it is best that you should attack aggressively.

Block or evade his basic sword slashes and pound on him. Mr. Chau will eventually go off the screen to ready his special attack that has him gliding across the area. This cannot be blocked. When you press the R1 or RB button, Mr. Chau will sometime show up and slash enemies on the screen. On a rare occasion, Mrs. Chau will also make a rare appearance to harmlessly yell at the enemies.
