Banana ice cream.
Obviously this doesn't contain real cream, but uses soymilk as an alternative.
You will need:
½ a cup of soy milk.
¼ teaspoon of cinnamon
1 teaspoon of vanilla extract
¼ teaspoon of fresh grated nutmeg
4 medium frozen bananas
1/3 cup maple syrup
Puree the frozen bananas in a blender, make sure that you puree all the bananas, you may need to scrape the bowl of the blender occasionally to ensure that you get the whole mixture.
Once the mixture has thickened, it will be difficult to blend, add the maple syrup and vanilla extract and continue to blend.
Once the mixture is smooth, add the cinnamon and nutmeg and blend again.
Add the soy milk. The mixture should be the consistency of frozen yoghurt.
This will become hard if you leave it in the freezer for too long, if this happens, simply add some more soy milk and blend again.
