How to Make a Warm Pasta Salad

I've just had that ah ha moment that scares me at times. I was making a picnic pasta salad and decided it should be a warm robust salad. The results were so wonderful I decided to share with you. I must admit this salad is OK cold but it is best when warm or at least room temp. You decide what veggies you like best and add or delete from my choices Remember recipes are only a road map that suggests the path for you to follow. Someone please put on a pot of Columbian Coffee. We're all gonna roll up our sleeves, take off our rings, wash our hands and get cooking.

Warm Pasta Salad

Ingredients:

1 pound pasta cooked to pkg directions (I like small salad shells)

2-3 ripe tomatoes (½ " dice)

½ pound sliced mushrooms (Your favorite)

1 softball size red onion diced

1-2 cup baby peas (fresh or frozen)

1 small tin flat anchovies fine diced (optional)

1+ Tablespoon Garlic Powder (not Garlic Salt)

1 Tablespoon Black Pepper

1 teaspoon red pepper flakes

1 cup grated mozzarella cheese (your favorite)

½+ cup grated Parmesan cheese (green box)

½ cup Pesto (store bought)

½ cup extra virgin olive oil (the better the oil the better the taste)

Directions:

Boil pasta per package directions. Toss all other ingredients in a large microwave safe bowl. Microwave on high 1-2 min. (just enough to take the chill off) Toss with warm pasta. Serve with extra cheese on side.

Notes:

You may desire a bit more Extra Virgin Olive Oil after the salad rests a bit. We all know the pasta will absorb much of it in time.

I also use the oil that the anchovies are packed in. Remember you are not using any salt except what is in the ingredients.

I think if you would add some flaked tuna, chicken, or salmon ans enhance with a nice crusty bread this would make a nice warm lunch.

I repeat this is only a suggested route if you decide to add or delete ingredients based on your tastes that is wonderful. Allow your inner self to inspire you.
