How to Make the Yummiest Cheesy and Spicy Nachos While Watching Nascar!

Do you like cheese? No, do you love cheese? I do.

Do you love jalapenos? I do.

Do you love Doritos? mmm mmm good. I do.

Do you love rice, especially seasoned rice? I do!

Then, you will love these nachos, just like I love these nachos, and my family.

I got this recipe from a friend, a few years ago, but I changed it some. It is yummy and filling!
Great for when company comes over to watch sports or movies. Great just for family or a couple wanting a great snack, or should I say meal. :o)

These nachos are great for almost any occasion.

We, usually, make ours on a Sunday afternoon and watch TV.

Maybe even take them for a picnic; or to have as an appetizer at a barbecue.

Two of us couldn't finish a plate size serving, because it is so filling, but oh so good!!!
My family asks me, often, when I will make them again. The things you will need and directions are below. Happy cooking and happy eating. :o)

Things You'll Need:

  • One 8 oz. package of cream cheese. One 8 oz. package of white sharp cheddar cheese.
  • One 8 oz. package of yellow Velveeta cheese.
  • One package of seasoned rice, Spanish rice works best. (Boxed or paper envelope package)
  • 1/4 cup jalapeno peppers
  • Doritos

Step1

Cook the rice (as directed on the package).
Melt the 3 cheeses in a double boiler
(or I use the microwave, 1 1/2 minutes
at a time, stirring in between.
If you want the cheese to be thinner,
you can add a little bit of milk or cream and
mix well.

Step2

Cut up the 1/4 cups of jalapeno peppers to bite size.
Take the seeds out so they aren't so hot. :)
If you don't like them really hot.

Step3

Mix the rice, 3 cheeses and jalapeno peppers all together and pour that mixture over Doritos.

  • I just made myself really hungry for some.
  • I am heading to the kitchen now. :o)
  • I guess I will tell my family I am making them. lol
  • WARNING:
  • Cheese gets very hot and can burn someone. Be careful. :o)
