How to Make Zucchini Blondies

The garden is overflowing with fresh zucchini. The folks at your office won't take anymore zucchini even if you bribe them with fresh tomatoes. Brownies are one snack food almost everyone likes. I know there are folks that can't or won't eat chocolate so here is a Blondie recipe that will help with the excess zucchini. Perhaps if you put the link for this recipe on the basket of zucchini someone will take a few more zucchini. So don't forget if you are freezing grated zucchini put some in one cup portions so you too can make blondies this winter. Someone please put on a pot of Columbian Coffee. We all will roll up our sleeves, take off our rings, wash our hands and get baking.

Zucchini Blondie

Ingredients:

1 cup grated zucchini

½ cup chopped nuts (your favorite)

½ cup butter flavored Crisco (generic)

1 ¼ cup brown sugar

2 large chicken eggs

1 Tablespoon Vanilla extract

½ teaspoon salt

½ teaspoon baking powder (not baking soda)

1 cup all purpose flour

1 small bag butterscotch chips (optional)

Directions:

Preheat oven to 350. Cream Crisco, eggs, sugar, vanilla extract together. Stir flour salt, baking soda together and mix with sugar and egg mixture. Mix in zucchini, nuts and optional butterscotch chips. Pour into a greased 9x9 pan and bake 45-55 min. now the hard part wait till cool before cutting into 9 pieces to enjoy.

Note:

Double everything and make in 9x13 greased pan. Bake 55-65 min. allow to cool and cut into 12 pieces

You may decide to use both butterscotch chips and chocolate chips for the 9x13 pan batch

EZ Cream Cheese Frosting

Ingredients:

4 oz cream cheese (room temp)

1 stick butter (room temp)

1 pound XXXX powdered sugar

1 Tablespoon vanilla extract

Directions:

Whip it, spread it, eat it... Use it all, double it for the 9x13 batch. Add sprinkles for eye appeal.
