Ice Cream Bars

¼ cup sugar

1 egg white

¼ tsp salt

3 Tbsp flour

½ tsp. Vanilla

4 Tbsp. Butter (belted)

¼ tsp maple flavoring

1 cup pecan pieces (chop small or fine)

2 cups vanilla wafer crumbs (about 42 wafers)

1 ½ cups fresh fruit (peaches, apricots, raspberries) use firm fruit

½ gallon vanilla ice cream (softened)

mix well sugar, egg white, flour, vanilla, maple flavor, pecans and salt. Drain. Spread mixture on baking pan and bake for about 20 minutes. Let cool completely then mix vanilla, butter & wafer crumbs. Pour into 9 x 13 cake pan (glass). Next take the pecan mixture, fruit and ice cram and mix well. When done take the mixture and spread over the crust. Freeze until firm (about 1 hours).

Cut with a knife dipped in hot water. Serve with a spoon full of whip cream if you like.
