An ice cream sundae bar makes a memorable party activity, but trying to scoop and serve the ice cream can also be messy and hectic. Why not make ice cream pies instead? Prepared and sliced in advance, buffet-friendly ice cream pies are easy to serve and allow party goers to add their favorite toppings for a custom sundae.

Each ice cream pie contains approximately six to eight servings. Up to two weeks in advance, make as many pies as necessary. Wrap securely to avoid freezer-burn.

Ice Cream Sundae Pie Recipe
Yield: 6 to 8 servings
Ingredients:
cookie or graham cracker crust
2 pints ice cream

Directions:
Transfer ice cream to a bowl and allow it to soften at room temperature.
Gently spread ice cream to fill the pie crust.
Cover and freeze until firm, about four hours.
Slice and serve.

Graham Cracker Pie Crust Recipe
Yield: 9-inch pie crust
Ingredients:
8 graham crackers, finely crushed (approximately 1 cup of crumbs)
3 tablespoon sugar
1/3 cup butter or margarine, melted

Directions:
Combine ingredients to form a mixture similar to damp sand.
Press in the bottom and up the sides of a 9-inch pie pan.

Ice Cream Sundae Pie Toppings
The selection of toppings makes this pie pop. Set up an assortment of sundae toppings and let guests customize their ice cream. Be sure to provide a serving utensil for each topping.

Suggested sundae toppings:
Sliced fruit
Maraschino cherries
Chopped nuts
Canned pie filling
Hot fudge sauce
Chocolate syrup
Butterscotch sauce
Chocolate chips
Peanut butter chips
Raisinets
Chopped candy bars
Mini marshmallows
Sprinkles
Cookies

Ice Cream Sundae Pie Recipe Tips
Experiment with different flavors for the pie crust. Crusts made from granola, Oreos or Nutter Butter cookies are commercially available.

Do not worry if the crust cracks a little while adding the ice cream. It will hold its shape once frozen.

If your ice cream pie is not picture-perfect, conceal any imperfections by topping it with whipped cream before serving.

Ice cream pies usually need to sit at room temperature for about ten minutes before serving. If serving buffet-style, skip the thaw time to keep pies chilly on the serving table.
