Idaho's muffin uses the wonderful Idaho potatoes, but in an unexpected form--shoestring potato sticks. These muffins start with the Basic Muffin mix found at:

Idaho's Potato Stick Muffins
1 recipe Basic Muffins
½ cup sour cream
¼ cup snipped chives
½ cup shoestring shoestring potato sticks, chopped
Prepare muffin recipe as directed except decrease sugar to 1 tablespoon and increase salt to ¾ teaspoon.
Decrease milk to ½ cup and add sour cream and chives to liquid ingredients.
Sprinkle chopped shoestring potato sticks on tops of muffins just before baking; press in gently.
Makes 1 dozen, about 160 calories each.
