What is Fruit Crumble? It's a fruit compote topped with strudel. Now, you can enjoy this treat in two versions, Regular or Gluten free, and with your choice of Apples, Quinces, Berries, or other Filling.
I do not condone the use of canned fruit in my Crumbles. These rely on Fresh or frozen fruit to ensure optimum deliciousness.
What you need:
Fillerà
2 to 4 Cups fruit of your choice
Cinnamon
Cardamom
Clove
Sea salt
¼ cup sugar or substitute Stevia for low sugar version.
(I actually leave the sugar out entirely.)
Regular Crumble Topperà
½ cup brown sugar
1 teaspoon honey
(Substitute ground coconut and stevia for a low sugar version.)
1 cup quick cooking or steel cut oats
¼ cup unbleached flour
¼ cup butter
Cinnamon
Cardamom
All spice
For the Gluten Free/ Dairy Free Versionà
Crumble Topper
1 cup coconut
½ cup rice flour
¼ cup potato or tapioca starch
½ cup slivered almonds (optional)
½ cup coconut oil
Stevia
Cinnamon
Cardamom
All spice
Nutmeg
Mix the thawed berries OR cut up apples or other fruit in a bowlà with the other filler ingredients. Season to taste with salt and spices. (I use about a ½ cinnamon, ¼ teaspoon cardamom, 1/8 teaspoon clove.) Arrange this into a deep pie plate.
In a second bowl mix the flours, spices, sweeteners, and oil orà butter together. I find that the hands work best. Mix until the ingredients are fully incorporated and crumbly. You should not find any traces of butter or oil. (I use 1 teaspoon cinnamon, 1 teaspoon cardamom, ½ teaspoon allspice, ¼ teaspoon nutmeg. You can season to taste and leave out what you don't like.)
Spread the crumble out evenly over the fruit and bake at 450 for 10 minutes on the middle rack. Then, turn on the top broiler and leave crumble on the middle rack. It should take about 3 to 5 minutes to begin to brown and crisp up.
Let cool for about 5 minutes and its ready to go.
Spoon it out and serve it with something creamy such as ice cream or coconut milk.
