Take the ribs and sprinkle salt and pepper over the front and back. Place the ribs on a medium hot grill. Close the grill hood and grill until the ribs are tender to the touch. This should take about 2 hours. Add more charcoal to the fire if needed at this time.This is to make sure that the grill temperature remains at a constant 325 to 350 degrees through the cooking.2
Start turning and basting the ribs with your barbecue sauce during the last 15 minutes of the cooking time.3
The baby back ribs are ready to be served at this point or for extra tender ribs, remove the ribs from the grill and wrap them in heavy aluminum foil. Place the ribs that are wrapped in the foil in a brown paper bag. Close the bag and let ribs rest for an hour in the bag. After 30 minutes unwrap the ribs and cut them up into serving size pieces.
