Inexpensive Ingredients for Thanksgiving Casseroles

What would Thanksgiving be without a creamy broccoli casserole dish? Well, that's just not possible so here is a really good one I've altered over the years so I can actually call this one mine.

Creamy Broccoli with Toasted Pecans. This is a four serving casserole, so if you're used to cooking you can do the math to increase the yield if need be. Here is some additional information I thought you might like to know. You're prep time is about ten minutes and cooking time is about twelve to fifteen minutes. And here's the best part it only cost seventy one cents per serving!

  • 1 large head of broccoli (needs to be at least two pounds)

  • 1 ½ teaspoons of salt

  • 1/3 cup of sour cream

  • ½ cup of shredded cheddar cheese (should be about two ounces)

  • 1 tablespoon of butter

  • ¼ cup of chopped pecans (I happen to like pecans so I add a whole cup)

Step one: Bring six cups of water to a boil in a large saucepan. Cut broccoli stems crosswise into coins; cut head into flowerets. Add broccoli flowerets, stem coins and one teaspoon salt to saucepan. Return to boiling; cook, stirring occasionally, until broccoli is tender, usually about eight minutes. Drain in colander.

Step two: Process broccoli in food processor until somewhat smooth, scraping down sides of work bowl as necessary. Add sour cream and remaining ½ teaspoon salt; puree until smooth.

Step three: Spoon broccoli mixture into microwave dish. Stir in cheese.

Step four: Melt butter in small skillet over medium heat. Add pecans; toast until fragrant, about two to three minutes.

Step five: Microwave broccoli mixture on High until heated throughout, around one minute.

Step six: Pour pecans with butter over broccoli.

Best served Hot! I hope you enjoy this as much as my family will.

What I liked about these ingredients is that there are several other recipes that they can be used in! Waste not, want not!
