4 large eggs
3/4 cup sugar
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon (or more)

Preheat oven to 350 degrees F (180 C). Blend together eggs, milk, sugar, and vanilla. Stir in cooked rice.2
Pour egg and rice mixture into a lightly greased 2 quart (2 L) baking dish. Take another baking dish and fill with about 2 inches (5 cm) of water. Place both dishes in the oven.3
Bake for 45 minutes and then stir. Bake for another 15 to 30 minutes, until middle of pudding is set. Sprinkle with cinnamon and serve warm or cold.Tip
