2 packages 8.5 ounce corn muffin mix
1 cup canned pumpkin puree
2/3 cup milk
2 large eggs

Prepare cornbread batter according to instructions on the package. Stir in pumpkin until just blended. 2
Bake muffins as directed. Butter hot muffin tops after removing them from the oven. Serve warm. Makes 12 to 16 muffins. Tip
We used these to supplement our supply of dinner rolls, to make sure that we didn't run out of bread. To keep things simpler this year, we may serve these muffins instead of rolls.
