Christmas Salad

This colorful salad goes ideally with the fun and joy of Christmas.

Ingredients: 1 bunch of arugula or 1 Romaine lettuce, 1 red leaf lettuce, 2 heads of Belgian endive, 1 sliced green bell pepper, 2 wedged tomatoes, ½ cup sliced onions or white mushrooms

Wash the lettuce thoroughly, dry, trim and tear into bite-sized pieces. Serve with separate vinaigrette, or mix vinaigrette into the salad. Serve it in a salad bowl. 10 servings will be yielded from this quantity. You can also add other veggies to the salad such as carrot, radish, broccoli and cauliflower as per choice.

Main Course

It is easily possible to substitute the traditional meat-based Christmas main course dish with a vegan dish. An excellent vegan Christmas Dinner recipe is given below:

Roasted Pesto Portobello (to serve 8)

Ingredients: 8 big Portobello mushrooms, 2 tbsp of extra virgin olive oil, 2/3 cup of bread crumbs, 1 cup of pesto, 1 tbsp grated lemon, 1 tbsp vinegar, ¼ cup chopped hazelnut, 1/3 cup parmesan cheese, salt

Method: Pre-heat the oven to 450 degrees. Remove stems from the mushrooms, and chop the steps finely. Put some virgin oil on the mushroom caps. Place them in the oven, lightly salted. Put the stems, bread crumbs, pesto, lemon zest, vinegar and hazelnuts together in a bowl. Put two tbsp of this topping into each mushroom cap. First roast the mushrooms on the top rack for 5 minutes, and then another 10 minutes on the lower rack. Then remove the mushrooms from the oven, sprinkle with Parmesan cheese and serve.

Dessert

Ingredients: 1 lb candied pineapple, ½ lb citron, ¼ lb candied orange, ¼ lb candied cherries, 1-1/2 lb raisins, ½ cup grapefruit juice, ½ lb currants, ¼ lb whole mixed nuts, 2 cups flour, 1 tbsp salt, ½ tbsp baking soda, 1 tbsp cinnamon, ¾ cup shortening, 1 cup white sugar, 5 tbsp cornstarch, 1 tbsp almond extract

Method: Combine the fruits and raisings along with grapefruit juice, and let it stand overnight. Next day add nuts and ½ cup flour to this mixture. Mix baking soda into the remaining flour along with salt and cinnamon. Beat the shortening separately for half a minute. Pre-heat the oven to 275 degrees. Grease a 10-inch square cake tin. Place the cake mixture in the tin. Bake for 3 hours. Keep it wrapped in wax paper and place in a cool area. Finally, decorate and serve.
