I also wanted to add something about having kids when you are 40 or over. My mother didn't start having children till she was 41 and she was never much of a meat eater either. I think it helped her. We adopted an older child who had not come from a culture where meat was eaten often. He still will not eat beef except if it is in chili or spaghtetti and even then the sauce has to be mostly tomatoes and very little meat. So we've all gotten used to eating very little meat, except grilled in the summer, like you do. Soups are a common meal here, especially vegetable soup or chicken noodle soup or bean soup. It is very economical, too. Loved reading about your family!
