Irish Green Lime Treats

An Easy but Superb Irish Treat!

Preheat oven to 350
Crust
Sift together:
1 cup flour
1\4 cup powdered sugar

Then add 1\2 cup melted butter, mix together and press into a dry 8x8" greased baking pan bake 20 minutes or till light golden in color.

While crust is baking combine:
2\3 cup of sugar
1\2 tsp baking powder
2 slightly beaten eggs
2 tsp lime juice
2 tsp grated lemon rind
1\2 cup grated unsweetened coconut (optional)
1\8 tsp green food coloring
Pour egg mixture over the baked warm crust and bake for 25 minutes.
When cool cut into 16 squares and dust with 1 tsp powdered sugar.

Each square will be 174 calories with grated coconut and 128 calories without grated coconut.
