Italian Feast - Weight Watchers Style

Italian food is quite possibly the eighth wonder of the world. Unfortunately, most of it is loaded with fat and cholesterol. I took it upon myself to experiment with different types of Italian dishes to discover ones that were both delicious and healthy. Below is my recipe for a three-course meal that is only 5 points for those of you who follow the Weight Watchers system. Best of all, you'll spend no more than ten or fifteen minutes in the kitchen!

Our meal consists of a spinach salad, bruschetta, and bow-tie pasta with my special sauce.

Here's what you'll need:
-- 1 cup of fresh baby spinach leaves
-- 2 tablespoons of a fat-free Italian dressing of your choosing
-- 1 piece of mozzarella string cheese from the Weight Watchers brand
-- 8 grape tomatoes
-- 1 tablespoon of olive oil
-- 1 cup of COOKED whole wheat bow tie pasta
-- Lemon juice [I use the Real Lemon kind in the large green bottle]
-- Capers
-- Black pepper

Instructions:

Toss spinach leaves in bowl with dressing to make your salad.

Half the grape tomatoes to make 16 slices total. Then take your string cheese and chop it into 16 pieces as well. Place in bowl, add olive oil, and stir.
(2 points)

Cook pasta and strain. Squirt a few drops of lemon juice, get a spoonful of capers, and add pepper to taste.
(3 points)

And with a grand total of 5 points, there is your scrumptious Italian meal!
