Italian Oven Fried Zucchini Spears

Preheat oven to 450 degrees. Grease cookie sheet or jelly roll pan, set aside.

Combine in a wide bowl:
1 cup bread crumbs
ΒΌ cup grated Parmesan cheese
2 Tablespoons Italian Herbs
1/8 teaspoon salt
Dash black pepper

Slice a two inch diameter zucchini into 1/4 inch strips. If desired, strips can be cut in shorter lengths for convenience.

In a plastic bag, combine:
1 Tablespoon oil
1 Tablespoon water
1/16 teaspoon vinegar or lemon ('2 shakes')

Place a few spears at a time in bag, close bag, and shake so spears are lightly coated with oil.
Pat each spear in crumb mixture so it is lightly coated.

Arrange spears in a single layer on the baking pan.
Bake uncovered in preheated 450 oven.
Turn once during cooking. Brown until tender and crunchy.

    This turned out perfect :) We were at the Italian Oven restaurant last weekend while traveling and it was the best I'd ever had! I cut the zuchinni into thin lengthwise strips and then topped with grated Parmesan cheese. Thanks for the recipe!
