Japanese Noodle Salad Recipe from Epcot Food & Wine Festival

Each year, food and wine lovers travel to Walt Disney World to experience the great food and wine at the annual Food & Wine Festival hosted at Epcot. While the festival is spread out over two months, how are you able to get your Walt Disney World Food & Wine festival fill during the other 10-months throughout the year? Epcot has released some of the recipes that have been served throughout the kiosks in the World Showcase in years past, which should help people get through the times they are not at Walt Disney World, or just to have a little flashback of Food & Wine vacations from the past.

This is the recipe for Japanese Noodle Salad from Epcot Food & Wine Festival Japan pavilion.

Ingredients for this recipe

2 3-ounce packages of ramen noodles (without seasoning pack)

1 tbsp sesame oil

½ cup chicken stock

1/3 cup white vinegar

1/3 cup soy sauce

4 tbsp sugar

2 tbsp finely chopped onions

1 tsp finely chopped fresh ginger

1/3 cup cooked seaweed

4 large boiled shrimp

12 ¼-inch slices of peeled cucumber

½ tsp lightly toasted sesame seeds

Directions for recipe

1. Cook ramen noodles as directed on package/ Drain and rince noodles under cold water than toss with sesame oil. Place in refrigerator for about 20 - 30 minutes

2. Combine the chicken stock, vinegar, soy sauce and sugar in a medium saucepan. Bring to a boil over high heat, the reduce heat to medium and simmer for 7 to 7 minutes. Stir in the green onions and ginger, set aside for 20 minutes to cool.

3. Divide the chilled noodles among 4 soup bowls. Top each bowl with seaweed, a shrimp and 3 cucumber slices. Ladle 1.4 cup of the sauce onto each portion and sprinkle with a pinch of sesame seeds.
