Ingredients

Serves 6
2 lb Pork Tenderloin
12 Scallions
3 tbsp Ginger - Freshly grated or ground dried
6 cloves Garlic - fresh minced
1 tsp Wasabi Powder
1 1/4 cup Soy Sauce - regular or low sodium
2 cups Mirin (Sweet Japanese Cooking Wine)
1/2 cup Cream Sherry

Directions for Japanese Style Pork Tenderloin

Mix and Marinate
Chop scallions finely, grate fresh ginger and mince fresh garlic. Combine with soy sauce, mirin, cream sherry and wasabi powder and mix well. Coat pork tenderloin and marinate in refrigerator for at least 1 hr. (The longer you marinate the pork the more flavorful it will be)

Pre-Heat Oven to 350 Degrees and Bake
Pre-heat your oven to 350 degrees. Place marinated pork tenderloin in a roasting pan with all of the marinade. Bake for an hour to an hour and a half, depending on the thickness of the tenderloin. Pork is best cooked medium rare.

Slice and Serve
Slice and serve warm with the marinade sauce.
Tip
Suggested Vegetable Accompaniments: Serve with sliced baked sweet potato and sauteed julienned yellow squash, green squash, radish and carrots. Suggested wines: a brisk "fruity" chardonnay, a chablis or even a light Japanese plum wine.
