Not Too Sweet Jello Recipe
3 cups water
1 box regular Jello, flavor of your choice
1 box unsweetened Jello, flavor of your choice
1 29 oz can mixed fruit
1 cup liquid from the mixed fruit
Heat 2 cups of water to boiling. I microwave the water in a medium sized microwave safe bowl instead of in a pot on the stove. That way I don't have to wash an extra dish later.
If heating the water on the stove then remove it from the heat once it begins to boil and pour it into a medium sized bowl.
If you microwave the water then take it out of the microwave once it begins to boil, in approximately 2 -4 minutes.
Add the two boxes of Jello to the hot water and stir until dissolved. I use generic gelatin. It tastes just as good as the name brand.
Add 1 cup of cold water to the Jello.
Open the can of fruit and pour only the liquid into the bowl as well. The liquid equals about 1 cup.
Stir thoroughly until a lot of the steam escapes and the gelatin has cooled a bit.
Add the mixed fruit to the gelatin and stir again.
Cover.
Refrigerate for about 4 hours or until the gelatin has set.
It has many flavor possibilities.
This is a very versatile recipe. You can use whatever type of canned fruit that you have on hand. Also you can mix two different flavors of Jello for a more original taste.
The liquid from the fruit adds to the fruity flavor of this snack. This Jello is still sweet enough for my husband although half of it is sugar free. And I feel alright about serving it to the children since the fruit provides some nutritionally redeemable quality to it.
This recipe makes about 8 servings. I serve it for snack 2 days in a row.
