Jim's Special Pudding Mix Cookies

My son Jim started baking cookies when he was nine years old, and has been baking and cooking ever since. His specialty is smoking meat and making all the trimmings for work, school, church, and other groups. But one thing he enjoys best is developing new cookie recipes. I felt he wouldn't mind if I shared this recipe, one of his favorites, with AC readers. I just call it:

Jim's Pudding Cookies

1 cup granulated sugar

1 cup brown sugar

1 cup or 2 sticks of Parkay margarine (or butter)

1 package pudding mix, any flavor

2 eggs

2 tsp. vanilla

Mix together in mixer bowl and cream well. Then add:

2 ½ cups flour

1 tsp. baking soda

½ tsp. salt

Mix well. If desired, nuts, chocolate chips, coconut, or even chopped, drained, maraschino cherries can be added, according to flavor of pudding mix chosen.

Roll into 1-inch balls, or drop by spoonfuls onto lightly greased or sprayed cookie sheets. Bake at 375 degrees until set and lightly browned. Remove to wire racks to cool.

    I talked to Jim today and he said he uses instant pudding in these cookies and that butter works better than margarine.
