This recipe will yield about 24 Jumbo Chocolate Chip Cookies, 48 if you prefer to make the chocolate chip cookies smaller. I use two cookie sheets to bake with, baking the batches simultaneously, to save time.
Ingredients for the Jumbo Chocolate Chip Recipe:
1 large mixing bowl
1-2 10x15 inch cookie sheets
Preheat oven to 375, spray cookie sheets with PAM
1/2 cup margarine or butter, softened (1 stick of Parkay is my preference)
1/2 cup vegetable shortening (Crisco)
1 cup firmly packed brown sugar
1/2 cup granulated sugar
2 eggs
2 teaspoons of vanilla flavoring
2 1/2 cup self rising flour
1 (12 oz) package of Nestle semisweet chocolate morsels
Place the margarine and shortening in the mixing bowl and cream together. This can be done with a spoon, fork or mixer. Don't use a mixer for the remaining ingredients, you'll want to mix by hand for the best results.
Gradually add both types of sugar, beating until mixture is light and fluffy.
Add eggs and vanilla, beating until well blended.
Gradually add flour, beat until dough is well blended (dough will be semi-stiff)
Stir in chocolate chip morsels
You will need a 1/4 cup measuring spoon, or a large table spoon that holds about 1/4 cup.
Take a spoonful of the Jumbo Chocolate Chip Cookie dough and drop it onto your prepared cookie sheet, ( I use a large table spoon to scoop the cookie dough out of the bowl with, and another spoon to rake the cookie dough off the spoon and onto the cookie sheet) each cookie sheet will hold six cookies. Use the spoon to make the dough round if needed, and press the dough down lightly in the center.
These are Jumbo Chocolate Chip cookies, they will triple in size from the original dough ball as they bake, so you do not want the sides of the cookie dough to touch.
Bake at 375 for 10-12 minutes, remove from cookie sheet immediately and place on wire rack or paper towel to cool. (cookies continue to cook if left on the hot cookie sheet)
These Jumbo Chocolate Cookies are perfect served as is, warm from the oven. After they cool, make an ice cream sandwich by using two Jumbo Chocolate Chip Cookies and placing a slice of your favorite ice cream between them.
You can also add pecans or walnuts to this Jumbo Chocolate Chip Cookie Recipe, add the nuts the same time you add the chocolate chip morsels.
