Once you've ordered a drink you're free to find your way over to the buffet counter. Most people start with noodles. Then, there is a large variety of vegetables including but not limited to peppers, onions, mushrooms, pineapples, tomatoes, tofu and water chestnuts.
Then further down the counter are meats. Choose from Chicken, beef, pork, lamb and occasionally shrimp, other kinds of meat or add several different kinds. You don't have to start with noodles; it's your choice to start with whatever you like in your bowl.
Once you've got all the food that will comfortably fit into your bowl (and stomach) it's time to move onto the sauces. Here is where your personal touch comes into play. If you don't know where to start there is a sign above the sauces showing how much of each sauce is used to make a certain taste. There are many different sauces including: soy sauce, garlic water, sweet vinegar, oyster sauce, hot sauce, salad oil, curry and a variety of others.
Your final stop is the grill, a huge round drum about 4 feet wide and three and a half feet high, where the chef takes your bowl and tosses your food onto it for cooking. Watching him move it expertly around the grill, turning it frequently to keep it from scorching is a treat in itself. After the food has cooked for a while, you are offered the option of teriyaki sauce, which is very popular with patrons.
Even though there are usually a number of orders cooking at the same time, the chef manages to remember which order is yours, and, in just a few minutes has turned it into a delicious finished product which he scoops onto a plate for you to take back to your table. On your way, you may want to stop by another small table to add even more sauces, or various chopped garnishes such as sliced almonds.
But beware, you just observed your food being cooked on a grill, which means it's extremely hot!
