Kalamata and Tomato Chicken Salad

What you will need:

2 tablespoons of *light mayonnaise

2 large sprigs of fresh basil, chopped (about 3 tablespoons worth)

1-2 teaspoons of paprika

10 pitted Kalamata Olives, diced

1 Roma tomato, diced

2 cups of *cooked chicken breast, chopped

2 cloves of garlic, diced

1 teaspoon of sea salt

Directions:

Mix all of the ingredients together. To enhance the flavors, you can chill for an hour before serving. This recipe makes about four sandwiches.

*Great substitutions for this recipe is regular mayonnaise, an all vegan mayonnaise, and canned chicken. Many health food stores will carry an all vegan mayonnaise, as well as, chunk white chicken with reduced sodium.
