Kentucky Derby Muffins are based on the Rich 'N' Sweet Muffin recipe found with the other basic muffin recipes at:

Kentucky Derby Muffins
1 recipe Rich 'N' Sweet Muffins
1/2 cup firmly packed light brown sugar
5 Tablespoons bourbon, divided
1/4 cup chopped fresh mint leaves (optional)
1/2 teaspoon grated lemon peel
2 Tablespoons granulated sugar
Prepare Rich 'N' Sweet Muffin recipe as directed except substitute brown sugar for granulated.
Add 3 Tablespoons bourbon, mint, and lemon peel to liquid ingredients.
While muffins are baking, combine remaining 2 Tablespoons bourbon with granulated sugar.
Brush over tops of hot muffins.
Makes 1 dozen. About 220 calories each.
