Kickin' Deviled Eggs

DK Jordan
Ingredients: one dozen large eggs, yellow mustard, kosher dill pickles, paprika, Miracle Whip light.

Gently place 12 large eggs into saucepan and cover in cool water about twice as deep as the eggs. Turn on high until comes to a boil and then turn down to medium and boil for 20 minutes. Drain and roll the eggs around in a pan or bowl breaking the shells. Gently roll in the palms of your hands to loosen the cracked up shells. Peel and rinse, placing eggs on paper towels to dry. Slice eggs lengthwise dumping the yolks into a small bowl. Place egg white halves into slots of deviled egg dish or on plate. Smash up the yolks with a fork and then add 3 tablespoons Miracle Whip light salad dressing, 1 tsp. yellow mustard, 1 tsp. dill pickle juice. Mix thoroughly. Taste. You may want to add a little more Miracle Whip if it's too tangy or mustard or pickle juice if you desire more of a kickin' deviled egg. You can increase either one of these depending on which kick you like the best. Spoon egg yolk mixture into egg white halves and sprinkle with paprika. You can put in the refrigerator for later or serve warm (as my family prefers).

The rest of our Christmas dinner is pretty traditional. Every time I think about changing to something new the kids (all coming back home for Christmas dinner) say something like, "mom you have to make ...." And so my traditions continue.

Turkey with mushroom gravy and onion sauce, homemade mashed potatoes, yams, green bean casserole, egg noodles cooked down in turkey juice with mushroom soup, cranberry sauce, rolls and of course kickin' deviled eggs.

For those who like a rather traditional and simple Christmas dinner this is the way to go. Lots of family and good eating with love and cherished memories make this the perfect meal. Add your best Christmas tablecloth and dishes to complete the picture.
