Krusteaz Buttermilk Pancake Mix Review with Easy Recipe Hints

I started by making my first batch by the directions. One cup mix, ¾ cup water, whisk until blended but leave a little lumpy and griddle. The few I cooked turn out fine. They were fluffy, tender and tasty. Just like real pancakes. Since it was still raining though, I was driven to experiment.
I added a beaten egg to the mix and made a small test pancake. This turned out even fluffier and more tender. Most cooks would have stopped here and enjoyed, but now I was on a mission.
After digging through the fridge and cabinets I came up with a variety of things to chunk into the pancakes.
The first experiment was pretty tame. There was a small handful of blueberries left in a fruit bowl in the fridge. So I started two pancakes on the griddle and topped with fresh blueberries. Cooked the first side, flipped and cooked the other side, served with a little butter and maple syrup. They tasted just like blueberry pancakes. Imagine that!
Next up was some banana slices and semi sweet chocolate chips I have left over from some past rainy day. I started two pancakes and arranged five banana slices on top of each and sprinkled around some chocolate chips. After flipping and finishing these were quite good, but I though they could be better. So I made a couple more the same way but topped each banana slice with a little brown sugar. Now the little chocolate and banana pancakes rocked!
After watching a little TV and napping with the rain tapping on the roof, I got up to make something healthy for lunch like a salad, but that box of Krusteaz Buttermilk Pancake mix was just staring at me. Daring me to make some more. I was getting low on stuff to chunk in the mix. Then I spied half a tub of Ricotta cheese in the back of the fridge. Since it was surprising still good it was Ricotta Pancakes for lunch.
I used one cup of Krusteaz, almost a cup of Ricotta with the liquid, one beaten egg and stirred. I had to add about a quarter cup of water to get the right consistency. I made a couple and served with maple syrup. They were quite good, but syrup was starting to get boring. As luck would have it there happened to be some apple and raisin pie filling in the fridge. At one time this had actually been a large slice of apple raisin pie, but my significant other is the worst pie server that ever lived and a crust thief to boot.
I nuked the pie filling a minute and topped the Ricotta pancakes with a generous spoonful. They looked good but something was missing. I dug around a minute and found a shaker that still had some confectioner's sugar left in it. After generously sprinkling the Ricotta pancakes topped with apple raisin filling they looked marvelous and tasted just as good as they looked. If I had had a sprig of fresh mint to garnish I would have taken a picture.
I am sure that there are a ton more things I can make with Krusteaz. Since I had an enjoyable experimenting with the pancake mix and all of the results were very tasty I must say I hardily recommend Krusteaz Buttermilk Pancake mix. The next time it rains I will make some savory dishes with the mix.
