Kwanzaa - Peanut Soup

The Perfect Soup for a Festive Kwanzaa Table

Throughout Africa you will find common foods that are simple to prepare. An excellent flavored staple of an African menu is Peanut Soup. This is a great soup served along with rice and is a favorite on many Kwanzaa celebration menus.

To prepare your Peanut Soup, start with 2-3 cups of chicken broth. You can prepare the broth with Boullion cubes or stock from a boiled chicken.

To your broth, add 1 medium bell pepper that has been cut into small cubes, as well as 1 small onion that has been minced as well.

Crush 1 clove of garlic and add this to your broth. Add 1 minced hot chili pepper if you like a little spice in your soup.

Add red pepper, black pepper and salt to suit your taste.

Add to the broth one sweet potato that has been chopped very small, along with 1 can of chopped tomatoes. The tomatoes are optional, but I find that they add a very nice flavor to the Peanut soup.

Simmer this over medium heat until everything in your soup is tender. Turn the heat down and add 1 cup of unsweetened, natural peanut butter. Stir slowly as you add the peanut butter and simmer for just a few more minutes.

Your Peanut Soup will be very smooth and nice and thick. This will be perfect for a festive Kwanzaa table.
