Here are my suggested recipes for a low-budget celebration that should be prepared for the period between December 26th and January the 1st. It is traditional to light candles for each of these seven days and reportedly a family member will announce almost like an online forum in that the family will openly discuss family matters as they daily light each candle. Discussing principles around a yummy meal about :- 'Unity', 'Self-determination', 'Collective Work and Responsibility', 'Co operative Economics', 'Purpose', 'Creativity' and finally 'Faith'.

So here are some 'Kwanzaa' recipes for a really low-budget celebration.

Okra Kwanzaa recipe 1.

Ingredients

300g fresh okra

2 tomato's

1 onion chopped

2 sprigs of garlic

2 Jalapeno peppers

2 eggs

Milk

Cornmeal

Vegetable oil

Chop everything as you would normally remembering to crush then chop finely the garlic add to a bowl everything including the eggs and extra seasoning, that is a splash of sea salt, a sprinkling of black pepper and of course the corn meal, mix it all together and let it soak and bind for few minutes, add to a nice hot pan and cook for 10 minutes, covering the pan and cooking on a medium heat. It's almost like a spicy Okra omelette (be sure to remove pips from Jalapeno pepper if you can't do hot chilly flavours).

Cheesy corn on the cob 'Kwanzaa' recipe 2.

Ingredients

Corn on the cob

Parmesan cheese

Mayonnaise

Garlic Powder

Chilly Powder

Mix the mayonnaise with a dash of garlic and chilly powder in a bowl with a spatula, you want enough to soak completely however corns you have, once this consistency has fully coated the corn begin to sprinkle on the parmesan cheese, coating it completely the best way to do this is to roll or sprinkle it on a separate plate. Next proceed to wrap the corn ears in foil completely sealing the mixtures, then you can cook however you like in the oven or on the barbecue. Cook completely for about 35 minutes. It makes a great traditional Kwanzaa meal accompaniment with any meat or vegetables.

Jamaican vegetable Patties, Kwanzaa recipe 3.

Ingredients

Orange pastry

Mashed sweet potatoes

Peas

Carrots

Jerky sauce

Vegetable cube

Boiled black eyed peas

Add all the cooked vegetables and cooked pulses together with the stock cube, hot jerky sauce into a blender, mix up for as long as you like. Meanwhile roll out your orange pastry then cut into hand sized circles. Make a crease as you hold then add the vegetable jerky mix, it should be cool and of a stodgy consistency. Add tablespoon at a time be sure you can close the pastry (be sure no to overdue the amount in the pastry. Squeeze around the semicircles parameters then glaze with an egg mixed with water. Be sure the semi-circle is sealed then pop into a piping hot oven say 240 c for about 15 minutes, remove and allow to cool down a little but it should be served nice and hot. Patties are cheap and great, you can if you wish add lamb, minced beef or salt fish. All in all a great Kwanzaa low budget favourite for your low budget celebration.
