So it's labor day and an excuse for fun food made in large quantity! This bucket potato salad is a real crowd pleaser. You can get a couple of plastic kids beach buckets from the local dollar store or on clearance at your local discount store since the summer is nearly over and they make the perfect serving bowls! You can even use the shovels that come attached to the buckets as serving spoons if you like! Choose festive colors to match your labor day holiday theme! Perhaps even garnish the salad with a few toothpick flag ornaments perfect for the Labor Day party.

Labor Day Bucket Potato Salad Ingredients:

INGREDIENTS

10 pounds of your favorite potatoes
one dozen hard boiled eggs, peeled
5 cups real mayonnaise
1 large red onion, diced
5 stalks green onions, chopped
1 red bell pepper, seeded and chopped
3 stalks celery, thinly sliced
2 teaspoons garlic powder
2 teaspoona ground black pepper
1 tablespoon mustard
1 cup pickle juice
paprika to garnish
1 large pickle, diced

DIRECTIONS
Bring a large pot of water to a boil. Add peeled potatoes, and cook for 20 to 25 minutes then drain under cool tap water. When potatoes are cool enough to handle, cut them into smaller chunks. Transfer potatoes into large mixing bowl and stir in pickle juice and mayonnaise, garlic powder, black pepper, mustard, chopped pickle and bell pepper, celery, red onion and chopped hard boiled eggs. Gently stir and toss until ingredients are well coated. Cover, and refrigerate for several hours or overnight. When reeady to serve, transfer potato salad into the clean serving beach buckets and then garnish with chopped green onion, and sprinkle with paprika for color. Optionally add any patriotic ornaments such as a toothpick flag.
