1/4 cup dried red lentils
3 T dehydrated onion
3 T dried ginger flakes
3 tsp garlic powder or granulated garlic
to taste salt and pepper
1 8-oz package rice noodles
1/4 cup dried shitake mushrooms, optional
1 tsp sesame oil
4 cans chicken or vegetable broth
to taste soy sauce and oyster sauce, optional
to taste chopped vegetables and tofu, optional
1/4 cup dried red pepper strips, optional

Layer the ingredients
In a jar with a tight fitting lid, layer the dry soup ingredients. Begin with the lentils. Top with ginger and onion flakes, mixed with mushrooms and peppers if desired. Add garlic and salt and pepper, if desired. Top with rice noodles.

Lift the rice noodles out of the jar. Set aside. Empty the remaining contents into a pot and add broth and sesame oil. Heat to a boil and simmer for 10 minutes.If you have included red peppers, strain them from the broth once the desired spiciness has been achieved.

If desired, add chopped vegetables and tofu to the broth. Continue to simmer until the lentils are cooked.

Remove the soup from heat. Add rice noodles and cover. Check noodles and stir often until noodles are cooked as you like them.

Serve soup with soy sauce and oyster sauce to be added to taste.
Tip
When you layer this soup, you may consider placing a square of cheesecloth beneath the rice noodles to make them easy to lift out.
