You have to admit that a Granola Layered Tofu Fruit Parfait sounds pretty damn good. Also, the tofu part might sound kind of gross to you as well. Rest assured knowing that I was once a tofu hater and this dish tastes just like a regular parfait and will blow your mind.
In order to make the following dish will require you to gather a wide variety of ingredients. You can either go to your local health food store or supermarket for all of these ingredients. Purchase yourself one 12 ounce package of silken tofu (any brand). You will also need to purchase some honey, vanilla extract, raspberries, apples, low fat granola, and raisins. Be careful when selecting your granola because a lot of companies out there claim to offer a low fat alternative when it is actually loaded with sugar and other ingredients that will do the exact opposite to your waistline.
Preparing the dish is fun, easy, and not too messy. What your going to have to do is place the entire package of tofu, 3 tablespoons of honey, and 2 teaspoons of vanilla into a food blender or processor. Run the machine until all of these contents are completely smooth. Once they are smooth you will empty the ingredients into a large bowl. You will then be ready to add the raspberries to your smooth mixture. Make sure to stir in the raspberries until they are smooth as well. Your mixture should look very pink now. In the instance that it is not please continue to stir the raspberries until it does happen.
The rest is a piece of cake. You will pour your tofu mixture into a set of serving glasses (or bowls). Each portion will then be decorated with sliced apple, a generous amount of granola, and a small teaspoon of raisins. Your finished product will be the Granola Layered Tofu Fruit Parfait that we set out to make. I promise you that after one bite you will be pleasantly surprised by how well the tofu tastes with the rest of the dish. Enjoy!
